TASTING NOTE
Colour

Straw yellow color with greenish reflections.

AROMA:

On the nose it is intense, fresh and complex, combining fruit notes ( apple, pear, apricots ) with hints of aromatic herbs and minerals.

TASTE:

In the mouth it is complex, with a sweet tooth, full-bodied and a predominance of citrus notes. The combination of the five native varieties gives it extraordinary complexity.

MATCHING
Seafood and fish in general, as well as rice, pate and white meats. Ideal as an aperitif. Serve between 10º and 11º C.
WHO CAN CONTRACT
Manual harvest by varieties in boxes of 20 Kg with subsequent selection on tables at the entrance to the winery. Fermentation of each variety separately at controlled temperature in stainless steel tanks for 21 days. After fermentation, it is aged on the lees before making the final “coupage” which, as in each vintage, seeks to maintain the original spirit of Santiago Ruiz.

Wines whites designation of origin D.O. Rías Baixas
Rías Baixas is one of the five wine-growing regions of Galicia, located mainly in the zone of Pontevedra. The appellation is divided in five sub-regions depending on the production: O Rosal, Val de Salnés, Soutomaior, Ribeira do Ulla, Condado do Tea. The vineyard area occupies about 4,000 hectares with an average production, belonging to 180 wineries. This appellation D.O Rías Baixas is the largest producer in Galicia. Total production reaches 16 million liters of wine. The icon is the wine elaborated with the grape Albariño, aromatic and harmonious wines with remarkable acidity and moderated alcoholic graduation. Even the national consumption is high; the majority of the production is exported abroad, basically in countries such as US, Germany, United Kingdom and Japan.
