WHO CAN CONTRACT
Dominio de Es La Diva is a red wine made at D.O. Ribera del Duero by the Dominio de Es winery, in San Esteban de Gormaz, Soria.
After 10 years as technical director in Dominio de Atauta, Bertrand Sourdais starts this personal project in Ribera del Duero. Dominio de Es is made up of 4 plots (La Mata, Llanos del Almendro, Camino Olmillos and Valdegatiles) of pre-phylloxera vines in soils with a sandy character, at a height of 1000 meters.
The vineyard is worked in biodynamic and in the cellar it looks for a kind and leisurely elaboration, without the tanicity that Bertrand Sourdais printed to his wines a few years ago. Long crianzas in large and used barrels with the purpose of valuing the complex fineness of the terroir where these fabulous wines are born.
Domain of Es La Diva is produced from a small plot, Valdeigatiles in Atauta (Soria), from a vineyard tilted to the north, where Tinto Fino mixes with white Albillo (14%) in sandy soils with a pure chalk substrate .
They used a quarter of full bunches (but the white was shredded) for fermentation in an open French oak barrel of 400 liters with native yeasts. Before finishing the fermentation, they pressed the hat and the fermentation ended without skins or scrapes. Aged for 20 months in barrels of two wines from Romanée Conti (Burgundy).
