Colour

Intense ruby red with violet hues. It appears clean, bright, and with a deep layer, hinting at its concentration and youth.

AROMA:

Intense and complex on the nose. Ripe red fruits such as plum, cassis, and raspberry dominate, accompanied by elegant spicy and vegetal notes like roasted red pepper. Aging aromas such as vanilla, cedar, and blond tobacco are well integrated, contributed by its time in barrel.

TASTE:

On the palate, it is powerful, structured, and balanced. It displays polished, firm tannins, with good acidity that brings freshness. Long and persistent finish, with a fruity aftertaste and a subtle mineral character, reflecting its high-altitude vineyards.

Perfect with grilled red meats, roasted lamb, stewed game, and aged cheeses. Also ideal with cured meats and spiced dishes.

The Catena Zapata Birth of Cabernet 2021 pays homage to the origin of Cabernet Sauvignon, symbolized on its label by a fox (Cabernet Franc) and a mermaid (Sauvignon Blanc), whose descendants, Cabernet Sauvignon, embark on a journey from the Pyrenees to the Andes.

Coming from high-altitude vineyards in Mendoza, this wine reflects the freshness and concentration typical of the region, thanks to a winemaking process that includes fermentation in French oak barrels and extended aging.

The calcareous soils and cold climate of Mendoza promote slow ripening, which preserves the freshness and intensity of the aromas. It is an excellent example of the unique potential of this region, offering an expressive Cabernet Sauvignon with great structure and notable aging potential.
