AROMA:

The nose is very powerful, with the aromas of blackberries, cassis and ripe black cherry harmonize with the unmistakable hints of undergrowth and spices, where the vanilla along with the elegance and seduction reigns. subtler touches of coconut.

TASTE:

The palate has a very good structure and a nerve that makes it impeccable lively. Taste by mouth with tannins present, but still with a fairly pronounced acidity that promises a great future ahead. Long, wide and very persistent finish.

Perfect with spicy and greasy gastronomy, they already help to reduce the corpulence of the wine and thus enter into a perfect harmony.
It can go hand in hand with stewed pork feet, grilled lamb shoulder, "confits", duck breast, etc.

Fermentation at 26 ° C with 2 daily pumps and post-maceration with 1 daily pigeage. Total maceration time of 9 to 14 days, depending on the vinification of each plot. Aged separately for the three varieties between 9 and 12 months, depending on the plot in French and American oak barrels.
