TASTING NOTE
Colour
Clean, clear and bright. Maroon color with ruby reflections, with a high layer intensity. Very nice to see.
AROMA:
The nose is extremely fruitful with a seductive collection of balsamic notes of the same aging. Fruit aromas with jam such as plums and figs, are perfectly balanced with the hints of chocolate and in the background the smoky notes of mineral.
TASTE:
Very warm in mouth but well harmonized. Where it is unctuous, with volume and nice and very ripe tannins. Long, large and persistent finish.
MATCHING
Perfect harmony with high taste dishes, such as (for starters) typical dishes of the area; "Roasted ternasco", chicken with "chilindrón", cod with "ajorriero", "codillo" baked, etc ...
WHO CAN CONTRACT
Grenache is one of the varieties that best expresses its terroir. For this reason, within the same denomination of origin Camp de Borja, the Grenache of Alt Moncayo are different from those of the rest of the same area. This is due to the strict selection of the vines, the type of soil they are planted in, the microclimate and the age of the vine. And when dealing with old vines they are very well-balanced vines with a very deep root system.
The soils where these old Grenache vines are located are glaciers, or piedemonte soils in the Ainzón, Fuendejalón and Tabuenca mountain ranges, which are very stony, with poorly rounded edges, limestone or marl, dolomites, quartzites and slates. These are highly permeable soils, which cause the effluent to seep into the deeper clay layers.
This proximity to the Moncayo is what gives the area a cold, dry continental climate with Atlantic influence in winter and Mediterranean in summer, with different microclimate depending on the altitude of the vineyard. Thus we can find average rainfall of 250 mm / year in the lowlands and 350 mm / year in the highest areas of Tabuenca. They are hardened by "El Cierzo", a dominant northwest wind that accelerates the evaporation of scarce rainfall.
All these factors, together with the location of the vineyards in areas of altitude between 500 and 800 meters, where the maturity is very slow, make it possible to obtain wines of great fruitiness and minerality.
