TASTING NOTE
Colour

Orange, mahogany hues, brilliant.

AROMA:

We appreciate notes of coffee and sweet spices, with nuts, caramelized orange peel, wild flower honey.

TASTE:

Preserved jam on the palate, long, honey candy. The structure is soft and velvety smooth, stable and balanced acidity. Sweet wine, thick, exceptional, very high level and with great persistence final.

MATCHING
This wine is very long-lived and its evolution is spectacular. Ideal to enjoy with fruit tarts, or even a first course of foie. But above all possible contrasts Taste is a wine to drink it alone, that if, in good company.
WHO CAN CONTRACT
In the heart of this legendary region of Tokaj in Hungary the purist Jean-Louis Laborde came to settle in 1992, acquiring Chateau Pajzos, which came directly from the Hungarian State and Chateau Megyer, bought in 2000 with its cellars that stretch for several kilometres on several levels located beneath the residence which formerly belonged to Prince Rakoczi.
This area is characterised by four main elements: protection in the north given by the Zemplén Mountain, a south-southwest position facing warm winds that blow in from the plain, constant humidity generated by 2 rivers, the Tisza and the Bodrog, and Indian summers which are frequently long and very sunny. These 4 factors contribute specifically to the development of noble rot, “Botrytis Cinerea”, the basis for the characteristic style of wines from this region.
The two estates supervised by Mr Maxime Belrepayre, in total and permanent collaboration with Jean-Louis Laborde, are managed with the same coordination of personnel and technological means.
Tokaj wines are Eszencia botrytized pure grape juice, or Hárslevelü traditionally Furmint.
