INFORMATION OF INTEREST Xarel.lo Pairal 2017
TASTING NOTE
Colour: Clean, clear and bright. Straw yellow color with golden reflections. Very nice to look at.
Aroma: The complexity of aromas is reflected inside the glass. He is sincere, frank and majestic on the nose, where his character is impregnated throughout. Aromatic range of wild herbs where they give way to the notes of stone fruit (apricot and peach), all harmonized with a very marked minerality and a certain unctuous finish with touches of bakery.
Taste: Entry in the mouth with the same frankness as it did in the nose. Palate of extraordinary flavor, breadth, depth and power, and where they manage to hold hands with a millimeter acidity brought to perfection. Long and slightly spicy finish.
MATCHING
The dishes with it could be served are baked fish, turbot, swordfish, or more fatty fish or with sauces such as salmon.
ADDITIONAL INFORMATION
The story of Can Ràfols dels Caus began in 1979, when the restless viticulturist Carlos Esteva decided to move to his grandfather's estate in El Garraf (Barcelona).
Twenty-five years after the start of his oenological activity, Carlos Esteva decided to take a big step with the construction of a new winery that would allow him to work better on the microvinifications he was carrying out with different grapes and plots. · Those of the estate. This new winery is completely embedded around the Garraf Massif, and is invisible from the outside, so that it is completely integrated into the landscape and projected at different levels in order to facilitate gravity vinification.
Can Ràfols dels Caus is currently one of the most unique wineries in Europe. For his part, Carlos Esteva can boast of having been nominated by the prestigious Académie Internationale du Vin thanks, among other things, to his ability to produce wines with very different characteristics in the same area, as reflected in the twenty wines that are part of its portfolio.
