Colour

Clean, clear and bright. Yellow color with greenish reflections. Very nice to look at.

AROMA:

The first nose contact can be said to be a clear representation of the landscape where it comes from. Aromas of a fruit that emerges timidly and delicately on a bed of mineral notes, nuts, there is sea; with small spikes of iodine. All developed with extraordinary precision, as only the wines signed by Raul Pérez.

TASTE:

Mouth-to-mouth accuracy. Acidity with a lot of vivacity that shares prominence with a salinity brought to a stratospheric balance. Sensation of a wood carried with perfect discretion.

This is a very unusual Albariño in every way. Its beginnings began with aging in bottles that were placed in submerged cages 16 meters below sea level, today it is still made but only for a small batch of wines for internal consumption of the bodega. The design of the label is dedicated to the sea, where it symbolizes the constantly moving waves, and its curious name is the same as a London restaurant. Limited production and considered without a doubt one of the best whites on the Spanish scene. It carries out a spontaneous fermentation in 750 oak French oak barrels, without temperature control. Subsequently, it is aged for twelve months in ten-year-old French oak barrels.
