Colour: Clean, clear and bright. Straw yellow color with golden reflections. Very nice to look at.
Aroma: First contact in a cup where it is aromatically very complex. The notes of pear and citrus appear together with the balsamic and floral notes, in the minutes the aromas of the same aging will take over, where the licorice, the empireumatics of the toast with honey and the mineral notes will stand out strongly.
Taste: Mouth where elegance is the main protagonist. Fine and delicate palate but with a taste and personality of a masterful balance. Creamy and with a very lively acidity. Long and persistent finish.
Fish and seafood baked or in light sauces, foie gras, smoked and quality delicatessen products, soft cheeses and cured.
A small winery that begins in 2004 recovering a small plot in the Torrelavit district (la Vinya dels Taus), in Penedés, and which is committed to carrying out a philosophy of work centered on the vineyard from its first day, pampering the bunch so that it can offer all its flavor and depth, and without any subsequent intervention other than scrupulous cellar care.
From the 2005 harvest, Enric Soler and his team work the vineyard according to biodynamic principles and it is defined as a winery exclusively producing white wines and focused on the multiple expressions of xarel·lo, which in their opinion is a variety noble who still has a lot to show.
According to the Egyptians, Nun was an unknown entity to which they attributed all origin, both chaos and opulence, day or night. This is how Nun was born in Cal Raspallet, with the aim of recovering some old family vineyards with vines over 65 years old from the small La Vinya dels Taus farm, of just 0.9 ha, a vineyard-garden in the eyes of all visitor.
Nun was one of the first great whites to reveal the peculiarity of a varietal as characteristic of the Penedés as the Xarel·lo grape, and since then it has been established as the great classic white of Xarel·lo, a wine that reaches its maximum expression with several years in bottle.
Enric Soler is a meticulous winegrower, a strong advocate of non-interventionist work, and in love with the white wines of Xarel·lo, for this reason, he has only made wines with this variety. All work is done according to the parameters of biodynamic agriculture.
