INFORMATION OF INTEREST Creu de Lavit Blanc
Colour: Pale and bright straw yellow.
Aroma: Complex and elegant where the ripe white fruit (melon, pear) and tropical (pineapple) predominate with a floral background and flower honey (genista). There are also notes of wood (vanilla, coconut) provided by the new barrel during fermentation and aging, well integrated with the fruit.
Taste: In the mouth it has a smooth, elegant and very fine attack with a long acidity that gives it freshness. The fresh fruit (pineapple) also appears well integrated with the toasted notes provided by the barrel. It has a fresh, tasty and round finish.
With Mediterranean cuisine such as grilled vegetables ("vegetable grill"), dishes with more taste, a selection of smoked meats, cheeses or fish (smoked salmon tartare) or a rice with seafood broth.
In 1998 the CREU DE LAVIT was released for the first time. Behind this wine many illusions had been put in by the team of winemakers and winegrowers from Segura Viudas, which meant the daring to create a varietal of Xarel.lo, with long aging in wood and complex elaboration.
The vines come from various farms. On the "El Molí" farm, the 51-year-old vines.
On the "La Figuera" farm, the 56-year-old vines.
This wine is the result of an assemblage of several Xarel.lo wines vinified separately.
Xarel.lo wine fermented in barrel:
After a static racking at a temperature of 14º C, the must went directly to new French oak, American oak and acacia barrels, where it fermented, and where it remained for 5 months. At this time the "batonnage" was performed.
Xarel.lo wine fermented in tank:
This must is statically racked and fermented in stainless steel tanks at 14 and 16º C.
The wine remains for 3 months with its lees in the same tank that it fermented.
The Creu de Lavit is 20% Xarel.lo fermented in barrel and 80% Xarel.lo fermented in tank.
