TASTING NOTE
Colour

Clean and bright. Straw yellow with greenish reflections, fine and constant bubbles with a very persistent crown. Very pleasing to the eye.

AROMA:

In the nose, we find the notes of white fruit, where the aromas of apple stand out, together with touches of citrus to grapefruit that give it a balance between fruit and freshness. It is necessary to emphasize in addition, its notes characteristic of brioche and yeasts, due to its aging.

TASTE:

Entry in the mouth where it is dry and fresh, with a present acidity that is helped by a fine and persistent bubble. It is pleasant, greasy, very lively and with an infinitely complex palate.

MATCHING
Ideal for appetisers, smoked dishes, fish and seafood.
WHO CAN CONTRACT
Cava Vallformosa Brut Nature Reserva Col·lecció is a white sparkling wine of 12% Alc. made by the Vallformosa winery in the area of ​​Vilobí del Penedés (Barcelona) and within the D.O. DIGGING. Cava Vallformosa Brut Nature Reserva Col·lecció is made with a coupage of the three typical varieties of CAVA, Macabeo, Xarel·lo and Parellada, in addition to Chardonnay, obtained from the oldest vineyards, of the 397 Ha. . The harvest of each variety is made at its optimum ripeness, the Macabeo at the end of August, the Xarel·lo in mid-September, the Parellada the first week of October and the Chardonnay at the beginning of September. The grapes are transported to the winery, where it is selected and, in stainless steel tanks, it is fermented at a controlled temperature, between 14-16ºC. After the fermentation of all varieties, the coupage is made and the wine is bottled with the yeasts and sugar. Bottles are stored in the cellar, where fermentation takes place and remain in contact with the lees for about 24 months before the final disgorgement.
