Bollinger covers 164 hectares, most of which are classified Grand Cru or Premier Cru. Pinot Noir dominates, grapes demanding an intense character that forms the backbone of the Bollinger style. As a guarantee of the highest quality, the best crus are fermented in wood by a small stock of 3,000 barrels, elderly. The company allows its wines aged for twice as long as that is a requirement of denomination. So you can develop your character completely. The Empordà appellation of origin is located in the northeastern part of Catalonia. The territory is distributed between two counties and 55 municipalities. 35 municipalities belong to the Alt Empordà and 20 are in the Baix Empordà. The average annual production is 65,000 hectoliters of wine with a planted vineyard area of approximately 2,000 hectares. At the beginning the appellation was called Empordà-Costa Brava, in 2006 the indication Costa Brava was eliminated.
