TASTING NOTE

Colour: Pink with grayish reflections, bright, clean.

Aroma: Eucalyptus fragrances first appear on the nose, then guava and citrus notes. Very complex and subtle.

Taste: Enveloping and round in the mouth, with notes of apricot and a long finish for this gastronomic rosé. Overall easy to drink overall.

MATCHING

Food and Wine Alliance
This rosé blends beautifully with Mediterranean cuisine. Grilled sea bass with fennel. Red mullet with "tapenade" ( very typical preparation of the provenze ), lobster salad or lobster.

César (1921-1998), the famous french sculptor known for his compressions signed this Cuvée "César a Sumeire" as a mark of fondness for the Sumeire family and for his Native Provence.

Clay-limestone made up of ancient gravelly alluvial deposits, vestiges of a huge alluvial cone from the streams descending Mont Sainte Victoire (1010 metres) and bordered to the south by Mont Olympe and Mont Aurélien.

Average age of the vineyard: 30 years - Garnacha 70%, Syrah 20%, Cinsault 10%. Yield: 50 h. / Ha. Sustainable agriculture
Vinification
Stabilization at low temperature (around 4) for 18 days in the pre-fermentation phase, then fermentation at controlled temperature in stainless steel tanks.
