Colour
Clean, clear and bright. Picota cherry color with garnet reflections. Very pleasing to the eye.
AROMA:
Entry into the complex and vibrant nose, with a mainly fruity character.
TASTE:
In the mouth it is fresh and structured with spicy flavors. Long and persistent finish.
MATCHING
Ideal with red meats, aged cheeses, sausages, blue fish, etc
WHO CAN CONTRACT
The soil of the D.O.Ca. Rioja illuminates the grapes of this red. This is the Sant Rafael estate, located right in a meander of the Ebre River, in the town of Laserna. From this, made up of 113 hectares, different varieties are selected to make Selvanevada.
In the cellar, the fermentation process of Selvanevada will be essential since, during the 12 days that it lasts, re-mounting and decanting are carried out. Thanks to this last technique, which consists of removing the wine from the tank and returning it in full fermentation, it favors its oxygenation and the corresponding increase in the number of yeasts (for which oxygen is essential to reproduce in the first phases of fermentation). After this time, it is decubated and two days later it is transferred to French barrels, where a malolactic fermentation will take place and the lees are separated into 3 racks.
Finally, the 6 months of aging will give Selvanevada all the character that makes it the best wine to taste every day.
