TASTING NOTE
Colour

Clean and bright Red color with ruby highlights. Very nice to look at.

AROMA:

Pleasantly floral nose, with notes of the freshest red fruit. With aromas of earth that bring a complexity and power more than worthy.

TASTE:

Really lovely entrance in the mouth. Marvelously rich and energetic with a long and persistent finish like few others. An excellent wine with an evolution in bottle more than assured.

WHO CAN CONTRACT
In 2001, thanks to his knowledge and experience, he decided to move to Beaune. Today, Philippe Pacalet House works on more than 10 hectares of vines in Burgundy for which he has contracts to buy the crop and make the same harvest. Of course, the organic cultivation of the vineyards has been carefully followed and is subject to strict specifications. The annual production is about 50,000 bottles distributed in Côte de Nuits, Côte de Beaune and Chablis. The different climates proposed come from the most famous denominations of the Côte d'Or. Philippe Pacalet carefully selected those plots of vineyards that best correspond to the beginning of his work: expressing the terroir of each climate through the wine. Philippe Pacalet is an oenologist who is part of the young people who began to make wine in Burgundy. He is a little over 40, previously the director of Domaine Pieuré Roch (until 1999), Domaine de les Proprietats de Henri-Frédéric Roch, one of the people who deals with the Domaine de la Romanée-Conti. Now, Pacalet has several plots for rent in several areas of Burgundy, from where it collects the grapes that, wisely vinified, are going to produce their "natural" wines.
