TASTING NOTE
Colour

Clean, clear and bright. Light red with ruby highlights. Medium / low layer intensity. Nice to see.

AROMA:

Amazing nose entry. The aromas of spices give almost all the prominence, where the black and white pepper are responsible, along with very expressive aromas of volcanic stone. For lovers of minerality this is definitely a wine to consider.

TASTE:

In the mouth it has a very strong acidity, but where it is able to be rounded thanks to a good freshness. Tannins until developed with a finish marked by sapidity and minerality.

WHO CAN CONTRACT
Borja owns about 6 hectares on property and some more leased to local growers. Always use native yeasts, vinify the plots separately and use sulfur only before bottling. Fudres, cement and barrels are their weapons for aging, and the rape is a faithful ally in winemaking. The goal is very clear: to regain the excellence of the Canarian wine and to let the minerality of the soils of Tenerife and the trade winds permeate the traditional varieties. Marmajuelo, Listán negro, Vijariego or baboso negro are names that sound again in the islands thanks to projects like Borja. Belonging to a fourth generation of Canarian wineries offered him the knowledge and passion needed to interpret them properly. The vines are between 15 and 40 years old and work from the maximum respect for the environment, without using synthesis products, thus facilitating the proliferation of wildlife. The grapes are selected twice, in the same vineyard and at the reception of the winery. Wild yeasts will be responsible for conducting the fermentation and after careful aging and a slight filtration. The wines are bottled without stabilizing. Description: - Vineyard located in Icod dels Vins, at an altitude of 750 meters and facing north. It works under the criteria of reasonable agriculture. - 1.26 hectares. - 10 years. - French-sandy lands. - Warm temperatures throughout the year, with an annual average of 19ºC, where the trade winds provide the necessary humidity in the vineyard. It was a year without significant weather events. - Less than 1000 kilograms per hectare. - Ferment in stainless steel tanks. Maceration for 20 days, without the addition of enzymes or yeasts that are not native. - Aged in 600 liter French oak barrels for 11 and a half months. - It is clarified but not filtered.

The Empordà appellation of origin is located in the northeastern part of Catalonia. The territory is distributed between two counties and 55 municipalities. 35 municipalities belong to the Alt Empordà and 20 are in the Baix Empordà. The average annual production is 65,000 hectoliters of wine with a planted vineyard area of approximately 2,000 hectares. At the beginning the appellation was called Empordà-Costa Brava, in 2006 the indication Costa Brava was eliminated.
