TASTING NOTE
Colour

Clean, clear and bright. Garnet color with very good intensity. Very pleasing to the eye.

AROMA:

We have before us a good identifying stamp of the Sangiovese. Aromas of black fruit, where the blackberries occupy the aromatic fan, manage to enter into a perfect symbiosis with the notes of dehydrated mushrooms and more subtly the earthy ones (minerals). Next, and with the corresponding minutes of a correct aeration, the notes of the tea sheet are expressed. Good complexity in the glass.

TASTE:

Entry into the mouth with good intensity, and where first of all a marked power welcomes you. Silky but refined tannins are the undisputed protagonists of its passage through the mouth. Good aftertaste marked by fruit, a fact that gives the wine a delicious, long and very intense finish.

MATCHING
As a good Sangiovese and due to its characteristics we will accompany it with the best dishes of Italian gastronomy. Veal "tunada", which consists of beef with tuna sauce, cream of milk and egg, Mushroom risottos with Parmesan, Nyoquis with Ragú sauce, and / or ravioli with the four cheeses.
WHO CAN CONTRACT
Acquired by Gaja in 1994, the Pieve Santa Restituta winery has 40 hectares of historic vineyards in the southwest of the DOCG Brunello di Montalcino. There, the stony, limestone and nutrient-poor soils are ideal for growing grapes and, in particular, for the Sangiovese variety. In 2006 the winery's land was completed with another 25 hectares of vineyards acquired by Gaja in the northeast of the appellation. In a surprising communion between the exceptional terroir and a genius of the stature of Angelo Gaja, Pieve de Santa Restituta makes his Brunello di Montalcino with grapes from different plots and two Cru, Sugarille and Rennina.
