WHO CAN CONTRACT
After several years of elaborating FORVM, we decided that it was the right time to bottle a small portion of the initial product reserves, with almost 20 years old “Soleras”, which we have kept untouched for seven years. This sweet-and-sour vinegar was aged in 300-litre barrels inside of stone dwellings located in the midst our vineyards. Every year we bottle about 375 lts., that is to say only 1.500 bottles. This is a vinegar with a difference, one with exceptional character and personality. Standing out are the subtleties derived from its long ageing. Perfect for inclusion in your most exquisite recipes, and is sure to add a dash of personality and especial zest to any dish.

The Empordà appellation of origin is located in the northeastern part of Catalonia. The territory is distributed between two counties and 55 municipalities. 35 municipalities belong to the Alt Empordà and 20 are in the Baix Empordà. The average annual production is 65,000 hectoliters of wine with a planted vineyard area of approximately 2,000 hectares. At the beginning the appellation was called Empordà-Costa Brava, in 2006 the indication Costa Brava was eliminated.
