AROMA:

Aromas of very soft fruit compotes, plums, nuts and with a hidden note of herbaceous spicy aromas with cinnamon, vanilla and Sichuan Pepper.

TASTE:

Tastes are complex on the palate: almond, citrus, pear and cinnamon flavors with ginger tips and tobacco and oregano. And a base and subtle of the bitter botanical.

DOLIN DE CHAMBÉRY
Dolin is one of the few remaining independent Vermouth producers and the only Vermouth production from Chambéry. Dolin continues to make the product on the basis of the authentic AO de Chambéry France. This means that the production takes place in Chambéry, with maceration of plants instead of infusions prepared in advance, and the only addition of sugar without another sweetening product. Dolin Vermouth contains 75-80% wine, much more than those of large international companies. The particular quality of Chambéry Vermouth was first identified in 1821 by one Joseph Chavasse, whose son-in-law Ferdinand Dolin had inherited the recipe, and the company of the same name. Dolin was winning medals in Philadelphia, St. Louis and London as early as the 19th century, and continues to be a benchmark and exponent of fine French Vermouth. A distinctive feature of Chambéry Vermouth was the creation of the Blanc (aka Bianco) style, the first white vermouth, the DRY variant of which has been used in cocktails since 1920. According to the Chavasse recipe, the base wine is made from local grapes. . However, the phylloxera caused the replanting of the region with red varieties, or overly aromatic white varieties such as Jacquère. As with Cognac and Armagnac, the best base wine should be very light, and as neutral as possible. Not surprisingly, the majority of the base wine now comes from the Armagnac vineyards of the Gers region, in addition to local / regional producers. On the other hand, the particular flavors and aromas of the plants are of vital importance, and the secret Dolin recipe continues to be made with herbs and aromatic plants found naturally in the alpine meadows around Chambéry.
