TASTING NOTE
Colour

It has a golden color, with an unexpectedly dense texture even its youth.

AROMA:

Its most characteristic features on the nose are floral and fruity notes with a slight hint of toasted notes from the wood.

TASTE:

The aromas previously perceived in the nose, make a sensory explosion in the mouth and we feel them intensely. It has a great aging potential, and as it ages it acquires a golden tone with intense and elegant fragrances at the same time.

MATCHING
It pairs perfectly with grilled fish, lobster, cheese and poultry.
WHO CAN CONTRACT
Château Simone is located 4 km from Aix-en-Provence, in the municipality of Meyreuil. The monks already produced wine there, in the XVIth century. This old scaffold has been owned by the Rougier family since 1830. It is Jean François Rougier who is in charge of the Domaine. Château Simone is one of the most important wineries in Provence and its reputation also comes from its identity, through the label of the wines, of classic and elegant style, unmistakable. The production of white wine is approximately 50%. They make cellaring whites that, as they age, become complex and develop a powerful and refined taste while being very representative of the Palette appellation, to which it belongs. An appellation of only 46 hectares with 4 Domaines. Château Simone encompasses 20 hectares of vineyards located at an altitude of over 1500 m above sea level. They vinify 3 cuvées, between red, rosé and white, which are unique.

The Empordà appellation of origin is located in the northeastern part of Catalonia. The territory is distributed between two counties and 55 municipalities. 35 municipalities belong to the Alt Empordà and 20 are in the Baix Empordà. The average annual production is 65,000 hectoliters of wine with a planted vineyard area of approximately 2,000 hectares. At the beginning the appellation was called Empordà-Costa Brava, in 2006 the indication Costa Brava was eliminated.
