TASTING NOTE
Colour
Clean, clear and bright. Pale pink color with salmon reflections. Very nice to look at.
AROMA:
On the nose it is a gift for the senses. It is presented with a good floral load and an intensity of very fresh black fruit.
TASTE:
On the palate with a very peculiar salinity that gives it originality. Persistent finish, long and with a slight pleasant bitterness.
MATCHING
all kinds of fish and white meats, light creams, black chocolate desserts.
WHO CAN CONTRACT
Can Sumoi is the new Raventós i Blanc natural wine estate.
Once they left in the year 2012 of the D.O. Cava, they decided to find the most suitable place to make this type of wine. In Can Sumoi they find the right location. An estate of 400 hectares, located at 600 meters of altitude. With 20 hectares of vineyards with native varieties, Parellada, Sumoll and Xarel·lo, the latter in the process of recovery. The farm also has 3 farmhouses from the 18th century and an old cellar.
Here, Pepe Raventós, winemaker and viticulturist, wants to elaborate natural wines with origin, obtaining the faithful reflection of the land where they are born and their landscape. To do this, the whole farm works in a biodynamic way, and elaborates its wines recovering the rural traditions and without adding any type of oenological additive.
