TASTING NOTE
Colour

Old gold colour, with hints of amber and dense layer.

AROMA:

It is a wine of great aromatic complexity with notes of candied fruit, ripe grapes, caramelized baked apple; with a slight touch closed reduction, which gives its long stay in the bottle so with a brief oxygenation it will be better.

TASTE:

In the mouth we notice his freshness and acidity, making this wine extremely pleasing on the palate, the sweetness doesn’t saturate the palate, and it’s not at all cloying, but silky and concentrated. It is an elixir of grapes and honey, with slight feelings of orange peel and citrus somewhere.

MATCHING
It is a wine to enjoy at all and with all your senses. Ideal with fruit desserts (semi-sweet, cooked, stewed) and selected pastries, we can also taste it as an appetizer or main course with pairings more risking.
WHO CAN CONTRACT
In the heart of this legendary region of Tokaj in Hungary the purist Jean-Louis Laborde came to settle in 1992, acquiring Chateau Pajzos, which came directly from the Hungarian State and Chateau Megyer, bought in 2000 with its cellars that stretch for several kilometres on several levels located beneath the residence which formerly belonged to Prince Rakoczi.
This area is characterised by four main elements: protection in the north given by the Zemplén Mountain, a south-southwest position facing warm winds that blow in from the plain, constant humidity generated by 2 rivers, the Tisza and the Bodrog, and Indian summers which are frequently long and very sunny. These 4 factors contribute specifically to the development of noble rot, “Botrytis Cinerea”, the basis for the characteristic style of wines from this region.
The two estates supervised by Mr Maxime Belrepayre, in total and permanent collaboration with Jean-Louis Laborde, are managed with the same coordination of personnel and technological means.
Aszú Tokaj wines are wines from grapes not be refermentan botrytized grapes pasta botrytized: 3 to 6 puttonyos unit of 25 kilos of pasta per 136 liters.
