Mediterranean climate, a temperature average of 15°C, but a great oscillation in temperatures between day and night, reaching 40° on the hottest days and falling to 12-13° at night. Rainfalls average of 600 liters. The Piorat zone has an abrupt orography with slopes from 15% to 60% of unevenness, fact that forces to harvest the vines in coastal (near the sea).
The altitudes vary from 100 to 750 meters on the high parts where towns such as Porrera are located. One of the distinctive features is the soil, made mainly by carboniferous slate, better known as “llicorella” (laminated and easy-breaking rocks with dark copper color) that protect the land erosion and facilitate the harvest in gradient slopes and give a touch of minerality to the wines. The 90% of the total production is red wine. The Priorat wines used to be defined as persistent, structured, rich in tannins, and normally aged in oak barrels. The allowed red varieties are Granatxa Negra and Carinyena (most significant) but also Cabernet Sauvignon, Syrah, Merlot, Cabernet Franc, Garnatxa Peluda, Ull de Llebre and Pinot Noir. Furthermore, the allowed white varieties are Garnatxa Blanca, Macabeu, Pedro Ximenez, Chenin, Moscatell, Xarel·lo and Picapoll.
