TASTING NOTE
Colour

It is lemon yellow, intense and very bright.

AROMA:

The nose is powerful and intense. Appears flint, white flowers with aromas of honey, citrus such as lime, and some exotic fruits reminiscent of mango, and then give way to ripe apricot.

TASTE:

The palate has volume, citrus fruit, a light touch of vanilla. Creamy and smooth in texture, it becomes taut and vibrant right away. It is a balance between power and finesse, with a very interesting medium acidity. It is structured, direct, with perfectly integrated wood, without being heavy. It has a medium persistence and finishes with ripe citrus.

Ideal with poultry, white fish and seafood.
WHO CAN CONTRACT
Born into the world of wine where he grew up, Philippe Pacalet already had an oenologist ancestor in 1780. He conducted scientific studies that led him to become a qualified oenologist and specialist in indigenous yeasts. Philippe Pacalet learned the trade from the best professionals and acquired solid practical experience during 10 years as a vineyard manager in Côte de Nuits. In 2001, thanks to his knowledge and experience, he decided to move to Beaune. Today, Philippe Pacalet works on more than 10 hectares of vineyards in Burgundy, and is known for his elegant wines made from Pinot noir and Chardonnay. Naturally, the organic cultivation of the vines is carefully followed and subject to strict specifications. In the winery, natural yeasts take care of the fermentations. The Pinot noir is vinified without destemming, in whole bunches and in wood, for 3-4 weeks, with the traditional "pigéage". Aging takes place in 228l barrels for 15 to 18 months. The Chardonnay is pressed and stabilized before fermentation in larger barrels. All this is done without adding sulfur, except for a small amount to protect the wine at the time of bottling.

The Empordà appellation of origin is located in the northeastern part of Catalonia. The territory is distributed between two counties and 55 municipalities. 35 municipalities belong to the Alt Empordà and 20 are in the Baix Empordà. The average annual production is 65,000 hectoliters of wine with a planted vineyard area of approximately 2,000 hectares. At the beginning the appellation was called Empordà-Costa Brava, in 2006 the indication Costa Brava was eliminated.
