The xarel·lo to make this ancestral comes from the estate "La Llengua del Pou", located around 300 meters above sea level, in the high Penedès Montserratí.

They make this ancestor naturally, with the must at the end of fermentation (density controls and residual sugars) from the Xarel·lo line of wine each year. Subsequent bleeding of the must that is still fermenting in the stainless steel vat to lower the temperature and thus be able to delay the yeasts and precipitate part of the must due to static cold.

Bottling without any intervention or addition, with bottles that hold the pressure to follow the wild fermentation inside them and with the aging inside a cement cup underground for about two years.
