Clean and shiny. Golden color with certain toasted shades due to Pinot Noir. Fine and persistent bubble. Very pleasing to the eye.
On the nose, it is one of the biggest shows that can be witnessed as a consumer. Complexity of aromas and high density and expressiveness in each of them. Pastry notes appear (sponge cake, marzipan and hints of butter), the most herbaceous and spicy hints (sweet paprika, fennel), the most subtle lactics provided by the small contributions of white chocolate, and all finished with notes of candied orange. With correct aeration and with the necessary patience, it evolves to an even more frank and direct complexity, offering us its most mineral range.
Entry into the mouth, where it offers us another sensory show. Fineness ahead of everything, where it is fused with a carbonic of a unique creaminess that manages to balance us with a sharp and lively acidity. If we had to classify three words to be able to form a verbal "coupage", they would undoubtedly be: Structure, power and freshness.
