TASTING NOTE
Colour
Clean, clear and bright. Maroon color with ruby highlights. It has a medium layer intensity. Very nice to see.
AROMA:
Entry into the nose with good intensity, concentration and complexity. Forest fruit aromas are presented, where blackberry and blackcurrant have the leading role. Then it gives way to a floral aromatic fan, where the violet manages to express itself in all its fullness and in which it enters into a harmony and a perfect balance with the tertiary aromas of the same aging: vanilla, pepper, tobacco leaf and light touches of chocolate.
TASTE:
On the palate it is presented with force and with certainly pronounced tannins. Retro-nasal route where the forest fruit is witnessed again, to end with a long and lively acidity.
MATCHING
Harmonizes with all kinds of red meat, whether grilled with sauce, game birds and stews.

In Mas Escorpí, at an altitude of 300 meters, are our 32-year-old Chardonnay and Pinot Noir vineyards planted in cool, stony soil with more than 40% lime. The production of this vineyard
it is around 2,500 / 3,000 Kg. per hectare. Based on the careful observation and treatment of the factors that influence our land and its habitat. We do not apply herbicides or chemical pesticides, we use natural resources with the main objective of preserving the balance of the environment and we maintain spontaneous vegetation covers to achieve spongy soils. Through biodynamics, a step beyond ecology, we vivify our vineyards and seek to raise biodiversity levels: we apply infusions and decoctions of plants to avoid pests, we make our own preparations and our animal and vegetable compost from our garden of medicinal plants and our farm of cows, sheep and horses.
Vinification:
From Mas Escorpí, we harvest the grapes in 25kg boxes, which then go through the selection table to make a second selection of the grapes. Pre-fermentative maceration at 12º and fermentation take place in a 3,000L capacity pan. During the elaboration, traditional, less aggressive punching is produced for two weeks to preserve the silkiness of the tannins. Only bleed wine is used after fermentation is complete. After uncorking, the 300-liter French Alier oak barrels (fine grain and medium roast) are filled where malolactic fermentation and subsequent aging with fine lees is carried out spontaneously until the beginning of spring. The wine will last a total of 8 months in 33% of new barrels and then it will go to the bottle where it will be rounded for at least one year before going on the market.
