TASTING NOTE
Colour

It has a medium-pale yellow color with hints of green.

AROMA:

It conveys aromas of citrus peel, such as pink grapefruit or tangerine; of white-fleshed, acidic fruit, such as green apple; and of sweet essences such as dried white flowers and pastry cream. It presents a slight reduction, coming from the terroir, along with spicy hints.

TASTE:

The palate is well-structured, saline, smoky and surprisingly complex, combining acids with an extraordinarily dry texture from the chalky soils that give this wine an exuberant body. It is extremely concentrated, rich and ripe, without losing an ounce of elegance and balance. It is radiant and precise.

MATCHING
Its citrus notes evoke a perfect pairing with chicken, among other white meats, as well as with Italian pasta recipes.
WHO CAN CONTRACT
The Domaine was founded by Henri Boillot's grandfather in 1885. The Boillot family started making wine at the beginning of the 20th century. The first generation Boillot was the one who began to exploit the vineyards that belonged to the family. The second generation, Jean Boillot, decided to expand the estate in 1975. He became responsible for the entire winery. In 1995 he started as a "négotiant". In 2000 they built the winery in Meursault and in 2005 he remained in charge of the winery after the departure of his brothers. The third generation, Guillaume Boillot, joined the winery in 2008. In 2011 they expanded their facilities in Meursault and acquired vineyards in Puligny-Montrachet, specifically in the Batard appellation. It was Guillume who in 2012 became the director of viticulture. Both Jean and Guillaume are working hard to ensure that the legacy of Domaine Henri Boillot persists over time.

The Empordà appellation of origin is located in the northeastern part of Catalonia. The territory is distributed between two counties and 55 municipalities. 35 municipalities belong to the Alt Empordà and 20 are in the Baix Empordà. The average annual production is 65,000 hectoliters of wine with a planted vineyard area of approximately 2,000 hectares. At the beginning the appellation was called Empordà-Costa Brava, in 2006 the indication Costa Brava was eliminated.
