TASTING NOTE
Colour

Pale yellow, brigthly, very clean with fine bubbles.

AROMA:

Clean and fruity (apple, fresh peach and honey aromas) with a softly and vintage frame.

TASTE:

Lively, tasteful and elegant well bodied wine. It is a delicious sparkling wine, with fine and delicate natural bubbles (perlage).

MATCHING
Certain heavy starters: croquettes (cheese, meat or ham), salty crepes, a slice of toast with grilled vegetables ‘escalivada’ (typical preparation of Catalan cuisine that consists of several types of grilled vegetables), Iberian cold meats. Toast with foie. Pastas, ‘Piquillo’ peppers variety filled with cod and ‘escalivada’ sauce. Fish: grouper with a soft garlic mousseline Desserts, Catalonian cream and toffee ice cake, catánias (Catalonian chocolate) and in a wide range of sweets.

Cava and Champagne are elaborated with the same procedure, called traditional method or champenoise. The process definition gives the name to the final product, a sparkling wine produced with the classic method of fermentation in bottle and ageing in “cavas”.
