TASTING NOTE
Colour

Clean, clear and bright. Cherry color with garnet reflections. Medium / high layer intensity. Very nice to see.

AROMA:

Entry into the nose where the fragrance takes over all the prominence. Exquisite red fruits (cherry, red currant and pomegranate with hints of wild berries) stand out to delight us with their aromas, and where, with a harmony that reaches perfection, they are linked with the subtle but present floral notes of lavender and the unmistakable vanilla.

TASTE:

It enters the mouth with a hypnotizing structure and complexity. Its refined tannins run across the tongue where they meet a tasty red fruit, ending with a long and delicate aftertaste. A wine where the balance can be felt from start to finish.

MATCHING
Perfect wine to pair with local products such as: Sirloin with Bordeaux sauce and wild asparagus, cheeses and pates, Gratton de Lormont, duck breast with red fruit sauce.
WHO CAN CONTRACT
Domaine de Chevalier is located in a clearing in the middle of a forest that protects the vines from extreme temperatures. In fact, Chevalier is a kind of secret garden, far from being the center of attention. This is a paradox for such an excellent wine, among the best in Bordeaux. Fermentation: The fermentation is preceded by a maceration that lasts from 4 to 6 days and highlights the fruit of the wine. Close monitoring is kept on fermentation temperatures, which can rise up to 30-32 ° C towards the end. The wine is pumped regularly and sometimes accompanied by pigeage (hitting the lid), an ancient technique that has always been used in Chevalier. This breaking of the lid and pushing it towards the wine with a long wooden stick results in a smooth extraction. Aging: Red wine is fully aged in barrels. This lasts 14-24 months for grand vin. The proportion of new oak varies from 40 to 60% depending on the vintage. The transfer is carried out by gravity flow from barrel to barrel and the wine is bottled in late June. The second wine, Esprit de Chevalier, ages for less time (approximately 12 months) in barrels that have already been used for two years.
